Our butchers cut fresh meats and seafood by hand exactly to your specification. That means no matter what cut, shape, size, trim, age, or quantity you need, make something up, we’ll deliver it the next day.
THE MEAT SHOP
Part of the original Southern Foods since the 1950’s, and a 30-year Certified Angus Beef® licensee, this is where we cut fresh beef, pork, veal, and lamb. It’s the real deal, with aging rooms to dry- or wet-age beef and pork to your taste, and a crew of butchers averaging 15+ years of experience.
THE GRIND SHOP
Why use a standard commodity burger anymore when you can customize your own? Test any combination of cuts, lean-to-fat ratio, grind texture, and patty shape to design your signature burger blend. Whether you’re looking to streamline a serious burger operation, or want to try blending Wagyu with bacon just because, we’re up for it.
THE FISH SHOP
We get you as close to the dock as possible. Receiving fresh seafood every day, much of it directly from local fishermen, you can have fish cut and delivered to you often within 24-48 hours of being caught. Our fishmonger keeps a broad selection of seasonal local species, from whole swordfish, to oysters, to live softshell crabs.
THE CHEESE SHOP
Our Cheesemonger curates the most extensive selection of cheeses in our region. With 300-400 imported, domestic, and local cheeses on rotation, there’s a profile to match every palate. Can’t use a whole wheel? He’ll cut and ship them in 1 lb. increments. If you don’t know where to start, he’ll help you design a killer selection for you menu. Or if that’s not your thing, he can top your cheeseburger with something no one else has.
Strong Regional Focus
Two distribution centers located in Eastern and Western North Carolina with our processing center in the middle give us close access to deliver fresher products and bring quick resolution when problems arise. Our region-wide coverage also allows us to procure local ingredients directly from their source, and at the peak of freshness, from the mountains to the coast.
Everything in One Place
“Mise en place” is the preparation of all equipment and ingredients before service begins. Literally, “set in place.” As your supplier, we gather everything you need into one place – from proteins to produce, dry goods, refrigerated and frozen products, beverages, disposables, chemicals, specialty and local ingredients. And if those thousands of items don’t cover your need, we’ll source new things for you. Now you have the convenience of receiving staple items in the same delivery as your favorite local and specialty products. Use us to make your mise en place, and life, easier.
